Delicious Chicken and Broccoli Recipes for Easy Meals

Chicken and Broccoli recipe:

1 lb chicken breast, sliced
2 cups broccoli florets
2 cups cooked rice
2 tablespoons soy sauce
1 tablespoon olive oil
2 cloves garlic, minced
2 carrots
1 bag shrimps
Salt and pepper to taste

Instructions:

Heat olive oil in a large skillet over medium heat.
Add minced garlic and sauté for about 30 seconds.
Add sliced chicken , shrimps and cook until browned and cooked through, about 5-7 minutes.
Add broccoli florets , carrots and stir-fry for another 3-4 minutes until tender.
Pour in soy sauce and mix well. Season with salt and pepper.
Serve over cooked rice.

Chicken, Broccoli, and Rice Casserole recipe:

1 lb cooked chicken, shredded
2 cups broccoli florets (steamed)
2 cups cooked rice
1 can cream of chicken soup
1 cup shredded cheese (cheddar or your choice)
Salt and pepper to taste
Optional: breadcrumbs for topping


Instructions:

Preheat the oven to 350°F (175°C).
In a large bowl, combine shredded chicken, steamed broccoli, cooked rice, cream of chicken soup, and half of the cheese. Mix well.
Season with salt and pepper.
Transfer the mixture to a greased baking dish. Top with remaining cheese and breadcrumbs if desired.
Bake for 25-30 minutes until heated through and cheese is bubbly.
