Lemon- Pudding Pound Cake Ingredients:

1 box of lemon or vanilla pudding
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup fresh lemon juice
2 tablespoons grated lemon zest

Instructions:

Preheat your oven to 325°F (165°C). Grease a 9×5-inch loaf pan with butter or non-stick cooking spray.
In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
Add the eggs one at a time, beating well after each addition.
In a separate bowl, whisk together the flour, Pudding, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Stir in the lemon juice and lemon zest until well incorporated.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
