Ingredients for the Pancakes:
1 cup all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 large egg
2 tablespoons melted butter (plus extra for cooking)
1 teaspoon vanilla extract
1 cup fresh strawberries, diced
Homemade Whipped Cream:
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
For Pancake Topping:
Additional fresh strawberries sliced and Whipping cream .
Make the Pancake Batter:
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix; a few lumps are okay. Gently fold in the diced strawberries.
Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown. Repeat with the remaining batter, adding more butter to the skillet as needed.
Serve:
Stack the pancakes on plates, top with sliced fresh strawberries, and generously dollop with whipped cream.
Drizzle with maple syrup if desired.
