2 cups cooked rice (preferably day-old rice)
1 cup large shrimp, peeled
1 tablespoon vegetable oil
1 small onion, diced
2 cloves garlic, minced
1 cup mixed vegetables (e.g., peas, carrots, corn)
2 eggs, beaten
1 teaspoon soy sauce
1 teaspoon oyster sauce (optional)
Salt and pepper to taste

Instructions:

Heat the oil in a large skillet or wok over medium-high heat.

Add the shrimp and cook until pink, about 2-3 minutes. Remove from the skillet and set aside.

Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.

Add the mixed vegetables and cooked shrimp back into the skillet. Stir-fry for 2 minutes.
