Garlic Herb Roasted Chicken:
Ingredients:
1 whole chicken (about 4 lbs)
4 cloves garlic, minced
2 tbsp olive oil
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
Salt and pepper to taste
1 lemon, halved
1 cup chicken broth or water
Instructions:
Preheat your oven to 425°F (220°C).
In a small bowl, mix garlic, olive oil, rosemary, thyme, salt, and pepper.
Pat the chicken dry and rub the garlic herb mixture all over the chicken, including under the skin.
Place the lemon halves inside the chicken cavity.
Put the chicken in a roasting pan and pour the chicken broth around it.
