Ingredients for Classic Lemon Herb Roasted Chicken Recipe:

1 whole chicken (about 4 lbs)
2 lemons (1 sliced, 1 juiced)
4 cloves garlic, minced
3 tablespoons olive oil
2 teaspoons fresh rosemary, chopped
2 teaspoons fresh thyme leaves
1 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
1 cup chicken broth or white wine (optional, for roasting pan)
Fresh parsley, chopped (for garnish)

Cooking Instructions:

Preheat the oven to 425°F (220°C).
Prepare the chicken. Remove any giblets from the cavity and pat the chicken dry with paper towels.
Make the herb marinade. In a small bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, oregano, salt, and pepper.
Season the chicken. Rub the herb marinade all over the chicken, including under the skin for extra flavor. Place lemon slices inside the cavity.
Roast the chicken. Place the chicken breast side up on a roasting rack in a roasting pan. Pour chicken broth or white wine into the pan to keep the chicken moist (optional).
Cook for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy. Baste the chicken occasionally with pan juices.
